It can be quite fascinating to learn how a company was born. In all of my encounters I have found it's never just one thing or one experience, but a amalgamation of experiences that can create a powerful vision and end-result. That's how I feel about Nina's Gluten-Free. I am a woman with two auto-immune diseases who lived unknowingly like that for more than a decade (18-28 yrs old). I passed the disease to one of my children. When I saw that they began to struggle with the same health issues as me, I asked them to join me on a journey to understand the best course of action for our health. Together we looked to something beyond medication. We looked at our whole bodies, nutrient-dense whole foods, and a gluten-free, soy-free diet. Diet has played the largest role in our well-being because it opened a blockage and cleared our heads of that fogginess that is highly-associated with these allergies and sensitivities. When your head is clear your have room to think, to dream, to explore, and to achieve!

Substituting Wet Ingredients
In 2024, I entered my gluten-free cornbread into in the Martha’s Vineyard Agricultural Fair. With a few secret ingredients including eggs, vegetable oil, brown butter, and plain, unsweetented coconut milk, I transformed it into a Blue-Ribbon Winner! However, you can easily swap these to make it completely plant-based and still achieve blue-ribbon results! Check out our chart for suggestions.

For years, I faced persistent low energy following my diagnosis of autoimmune diseases. Although I was prescribed thyroid medication, after a decade of use, I began experiencing issues like poor circulation, bloating, and fatigue. This situation was incredibly frustrating as I felt I was not living my life to the fullest. In my search for solutions, I discovered a significant clinical study
conducted in the U.S. that examined the impact of a gluten-free diet on individuals with hypothyroidism, titled "The Effect of a Gluten-Free Diet on Thyroid Function and Autoimmune Markers in Patients with Hashimoto's Thyroiditis: A Randomized, Controlled Trial," published in The Journal of Clinical Endocrinology & Metabolism in 2014. The study's key findings indicated that patients who eliminated gluten from their diets experienced improvements in thyroid function, particularly in thyroid antibody levels, which are indicators of autoimmune activity. Additionally, those who followed the gluten-free regimen reported enhancements in symptoms related to hypothyroidism, such as fatigue and digestive problems.

Gluten is a protein found in wheat, barley, and rye, and it plays an important role in baking by giving dough its elasticity and structure. For most people, gluten is harmless and can be consumed without issue. However, some individuals have a sensitivity or an allergy to gluten, which can cause adverse reactions. The most well-known condition related to gluten sensitivity is celiac disease, an autoimmune disorder where the body mistakenly attacks its own tissues when gluten is consumed. This can damage the lining of the small intestine and prevent the absorption of essential nutrients.
For others, non-celiac gluten sensitivity (NCGS) can cause discomfort, such as bloating, abdominal pain, or fatigue, even though their immune system does not react as it does in celiac disease. The exact cause of NCGS is still not fully understood, but it can make consuming gluten-containing foods unpleasant. In both cases, eating gluten triggers symptoms that can negatively impact daily life, so individuals with these sensitivities must avoid foods containing gluten to stay healthy and feel their best.
